A #Foodie’s Tale – A Fall delicacy: Pumpkin Gnocchi with browned butter, spinach and sage

The yummiest way to enjoy Pumpkin! 

Hello all of you fantastic beats!

It is Fall here and pumpkins are everywhere! In every way and form! 🙂

So, today I wanted to share my favorite pumpkin recipe…

Pumpkin Gnocchi with browned butter, spinach and sage.

This is, seriously, the absolute BEST way to eat Pumpkins!! This can be a little laborious, especially if you want your gnocchi to look good but is SO worth it!

I enjoy making this as much as I enjoy eating it because the kids have lotsa fun shaping the gnocchi while I drink the wine 🙂 and, man it’s such an earthy, artisan dish, so simple but yet so sophisticated that it makes me feel like a very accomplished chef! 🙂

I think I usually follow this recipe BUT I add mashed potatoes and an egg to the gnocchi and spinach to the sauce.

Of all the ingredients the glass of wine is THE most important one because, if you somehow manage to mess up the recipe, you really won’t care 🙂


You basically mix flour, mashed potatoes, a canned of pumpkin, an egg, salt and pepper and then add flour little by little until the mixture has a play dough consistency.

Then you sprinkle some flour on the work surface, roll the dough into a thin log and cut into small pieces. Please notice the glass of wine is always there for you providing emotional support, in case you are wondering if you will be able to shape the gnocchi properly! 🙂



In case the wine isn’t enough, this is the video I watched to learn how to shape the gnocchi with a fork… 🙂

And voilà… A full glass of wine later, the gnocchi are indeed well-shaped [or at least they will SEEM well-shaped]…


Now, no matter how hungry you are YOU GOTTA let them dry for a couple of hours before boiling them in salted water. As soon as they float they are ready!

While they boil you make the sauce! Notice the wine will be there for you as well! 🙂


Slightly [slightly!!!] brown some butter in a pan, add finely chopped garlic, fresh roughly chopped baby spinach and sage.


Then, VERY delicately, toss in the cooked gnocchi and add Parmesan cheese and tossed the gnocchi until is all coated. Serve and top with fresh ground pepper and Parmesan… and enjoy! Don’t you worry if your eyes close and roll back. You are NOT possessed. It’s actually the normal reaction. because…
