A Foodie’s tale: Stuffed Pork Loin

Hello all, as promised, here I’m sharing recipes! [or kinda]. 🙂

This is a recipe developed by B-Dad! As you can tell, I drink wine when I cook, he drinks scotch 🙂

This stuffed pork loin was our contribution to my brother’s New Year Eve Dinner Party.

B-Dad bought a huge pork loin and asked them to “butterfly” it, which is to unroll it or cut it open in a very thin layer. He chopped apples, mixed them with dried cranberries and peaches and marinated them overnight in his special marinade made with apple juice, rosemary, garlic, red peppers and onions. Then he stuffed the pork loin with the fruits mix, roll it, tied it up, baste it in the marinate and baked it at 350 degrees for four hours.


It came out delicious! I can’t believe I didn’t take a picture of the end result, thought! UGH!

OK… In my defense… it was a NEW YEAR PARTY people! I was busy having fun! 🙂

My brother’s New Year party was really fun.

Besides the delicious Food and Drinks, we played Bingo [Butterfly won as usual, she is so lucky with games!] and Yankee Swap with REALLY bad gifts like boxes of tissues, a wine bottle filled with water and canned food. I did end up with the ONLY good gift which was a Yankee Candle! 🙂
